This is a Japanese inspired nut protein ball utilising Matcha powder, sour cherries and rose petals. Think “Five centimetres per second”. The flavour is quite delicate.
1 and 1/2 cups mixed nuts – I had some pecans and coconut slices left from an online masterclass and added some cashews
Approx 1/4 to 1/2 cup date soaking liquid – again left from a class – gentle sweetness without body
1/2 tsp matcha powder
1/2 cup chopped dried sour cherries – I used these
1-2 tbsps dried rose petals – mine were from my garden.
1-2mls 5% diluted rose essential oil
very small pinch of salt
Put nuts in a food processor bowl and process until reasonably fine.
Add the rest of the ingredients and process until starting to stick together. If too dry add a little extra liquid.
Form into small balls
Store in fridge
