Cashew Garlic Dip (Aioli)

Other than the soaking of the cashews this is pretty quick.


1 cup cashews – soaked overnight and drained

3-4 large cloves of garlic

1tbsp garlic powder (optional)

pinch of salt or to taste

juice 1/2 lemon

freshly ground black pepper to taste

1/4 cup Extra Virgin Olive Oil

Put all ingredients in a bowl and blitz down with a hand blender 


Put in an appropriately sized Nutribullet cup or similar and blend till smooth

For a runnier texture for more of a mayonnaise or sauce consider extra oil or water or even a chopped, peeled courgette. This will affect the flavour balance so you may have to adjust seasoning. The addition of water will also affect the keeping qualities
