Tangy Tomato Rice

This sounds delicious. My preference would be to use coconut oil for me and maybe organic ghee if just making for the rest of the family (my husband and daughter). Topped with a liberal sprinkling of sprouted lentils and with a side order of poppadom this would make a rather nice lunch for work. It would also spare me the usual “err what on earth is that in your lunchbox?” questions.
